Hey there,
I'm Anston, the baker behind The Underground.
Baking has always been my way of connecting with people, a passion rooted in my childhood days in Dubai, enriched by my Sri Lankan heritage, and a love for flavours that spark cherished memories meant to be shared. In 2019, I had the whirlwind experience of competing in The Great Australian Bake Off, where I had the honour of baking my way into the Top 7 and sharing my creations with households across Australia.
What began as a simple weekend hobby, crafting cupcakes and birthday cakes for friends gathered around our table, quickly grew into something much more meaningful. Today, The Underground is a beloved bakery in Sydney where custom cakes, cookies, brownies, and tarts are created with care, flavour, and heart. At its core, The Underground is powered by my partner, our beautiful daughter, and the circle of friends who have cheered me on since my very first sponge cake. Together, we have built a sanctuary where stories are baked into every creation. These stories come alive in every celebration cake, every sweet treat, and every nostalgic bite.
For me, baking goes beyond the act of making food. It captures life's little moments such as grand birthdays and intimate gatherings, quiet cups of tea (or coffee, my lifeline), and the pure joy on someone's face as they savour that first bite. Every bake that leaves our Sydney kitchen is made to be shared, with care, nostalgia, and joy woven into each creation.
